Maya Kaimal is a leading authority on Indian food and an award-winning author of two cookbooks: "Curried Favors" and "Savoring the Spice Coast of India". She has appeared on Martha Stewart, the Food Network and the Today Show, and writes about Indian cooking for "Saveur" and "Food & Wine". Maya Kaimal introduces three fresh, vibrant simmer sauces: Coconut Curry, Tikka Masala, and Vindaloo. These are all-natural, authentic Indian curry sauces made with only the best ingredients, created for the American kitchen. All you need to do is heat the sauce in a pan with meat or your favorite ingredient, simmer and serve.
Tikka Masala is a classic creamy tomato-based curry, mildly spiced with cinnamon, cardamom and clove. A traditional favorite simmered with chicken and served with rice. Also works well with fish, shrimp or vegetables, or blended with yogurt for a cool dip or spread. (Serves four)
Mild heat level

Vegetarian

Coconut Curry: With this curry, Maya Kaimal brings you the flavors of tropical South India, delicately balancing sweet coconut milk with fresh ginger and fragrant curry leaves. These exotic flavors make a delicious curry with seafood or vegetables, or a tasty marinade for grilled foods. (Serves four)
Medium heat level

Vegan and vegetarian

Vindaloo: This famously hot and sour curry is made with black pepper and coriander from Indias spice coast, tempered by tangy tamarind and coconut milk. Always a perfect sauce for beef, pork or lamb, Vindaloo is also great for spicing up tofu and vegetables or burgers and wraps. (Serves four)
Spicy heat level

Vegan and vegetarian

I have to admit that I have only tried the tikka masala sauce to make the very well known chicken tikka masala dish. This sauce is FANTASTIC, and it is a large amount. The ingredients are completely natural (I believe there are only about 8 ingredients), and exactly what you would put in it if you were making it yourself. This sauce rivals the one from scratch out of Cook's Illustrated, and saves you about an hour of cooking down herbs, oils, spices and tomatoes. My husband grew up in London and lived off curries. Since he moved here, we have tried every jarred sauce and paste, including those from Whole Foods and Trader Joes. I believe that the key to these is that they are refrigerated and fresh, therefore, all the ingredients are still discernible. Better yet, at some Costcos, these sauces are available for $6.99. For me, I like the sauce a little creamier, and so I add some heavy cream. With that addition, this tub can easily serve six (with plenty for rice, chicken and dipping). Straight out of the tub, the sauce would serve 4+.
