Essentially, three main varieties of lentils are grown in Spain. We have available for you the most prized ones: tiny brown 'Puy' lentils (pardinas). These lentils are unique because they retain their shape, and have a distinct flavor. The other two varieties: big fat green castellanas and medium brown ones cook almost to a purée. Because our artisan quality lentils are super-dried to preserve their full flavor and retain their shape, they require overnight soaking. They are the ideal foundation for a pot of classic of Lentejas con Chorizo, a favorite hearty stew from Spain. Each bag comes with an authentic recipe. To prepare traditional Lentejas con Chorizo, you will also need some pimentón smoked paprika, some jamón serrano, chorizo, and olive oil. You can find all of these ingredients at La Tienda.
