For generations, Aunt Berta's family lived in a small mountain village in Europe. They took the fresh bounty of their fruit orchards and turned them into brightly colored, delicious preserves. The tradition began with her great-grandmother who had a large kettle resting on an open fire in the kitchen's hearth. She developed her own formula based on fruit, sugar, and tender care. She knew exactly how long to stir the bubbling fruit in order to bring out its natural flavor and when to stop in order to preserve its natural color. Testing the blend for taste and texture, she'd give an approving wink and immediately pour it into jars. Today, Carmel Farms is a self-sustaining German community that migrated back to Israel where their farm has a view of Mt. Carmel. Aunt Berta's small kitchen has been transformed into a family-sized state-of-the-art facility. In addition to a spacious area for hand-preparing the fruit, this farm-sized factory is equipped with the latest cooking, filling, pasteurizing, and cooling systems.
